Stuffed pasta shells but with a twist! Instead of filling pasta shells with ricotta, I thought I'd mix things up and stuffed it with vegan sausages. To make it even better, I topped EACH pasta shell with Dibble Cheese Sauce. The result? Super cheesy, creamy and delicious pasta.

Ingredients 

SAUSAGE FILLING

  • 1 Tbsp Olive Oil
  • 6 Pack Vegan Sausages, removed from casing 
  • 1 Medium Shallot, finely chopped
  • 2 Garlic Cloves, finely sliced
  • 1 Medium Red Chilli, finely sliced
  • 1 Tbsp Italian Herbs
  • 2 Tbsp Fresh Parsley, finely chopped
  • 2/3 Jar of Marinara Sauce
  • 1/2 Cup Vegan Cream
  • 2 Cups Spinach
  • 2 tsp Salt
  • 1 tsp Pepper
  • 1/4 Cup Nutritional Yeast
  • 1/2 tsp Dried Rosemary 
  • 1 Tbsp Extra Virgin Olive Oil
  • 1/4 Cup Dibble Cheese Sauce 

PASTA SHELLS

  • 1 Tbsp Salt
  • 3/4 Packet Large Pasta Shells
  • 1/2 Dibble Cheese Sauce (for topping)
  • 1/3 Jar of Marinara Sauce
  • 2 Tbsp Fresh Parsley, finely chopped

Method

Sausage Filling

  1. In a large pan on medium heat, add 1 Tbsp olive oil, sausages and using a wooden spoon, break up the sausages so it resembles minced meat.
  2. Push aside the sausages from the middle to form a circle and add in the shallots, garlic, chilli, 1/2 tsp salt, 1/4 tsp pepper and stir together thoroughly. Cook for 1 minute and stir occasionally. 
  3. Sprinkle on the herbs, parsley and mix together. Cook for 30 seconds and stir occasionally. 
  4. Add in the marinara sauce and combine thoroughly. Cook for 1 minute and stir occasionally. 
  5. Add in the cream, mix thoroughly and cook for 1 minute, stirring occasionally. 
  6. Add in the spinach, 1/2 tsp salt, 1/4 tsp pepper, cook for 2 minutes, stirring occasionally or until the spinach has wilted. Set aside to cool. 
  7. In a large mixing bowl, add the sausage mix, nutritional yeast, rosemary, 1/2 tsp salt, 1/4 tsp pepper, extra virgin olive oil and Dibble Cheese Sauce. Mix together thoroughly.

Pasta Shells

  1. Preheat the oven to 200°C.
  2. Bring a large pot of water to boil, add salt and pasta shells. Cook until al dente. Drain and rinse with cold water to help cool down the pasta shells.
  3. Evenly spread the marinara sauce to the base of a large baking dish.
  4. With a tablespoon, gently fill each pasta shell with the sausage filling.
  5. Top each filled pasta shell with Dibble Cheese Sauce and place it in the baking dish. Continue this until the baking dish is completely filled.
  6. Bake for 15 minutes then rotate the dish and bake for a further 10 minutes or until Dibble Cheese has melted and browned.
  7. Top with fresh parsley.
  8. Enjoy!
