Do you know what's more fun than pizza? Pizza scrolls! It's the one thing that is sure to bring excitement to the dinner table, especially for kids. They look fun, they taste great, they're basically pizza. This vegan pizza scrolls recipe is also great for a snack, lunchbox, or even breakfast. If you're looking for a nutritious and vegan-friendly recipe to try, this one is definitely on the list. For this pizza scrolls recipe, all it takes is a simple homemade dough filled with a creamy dairy-free cheese sauce made with Dibble Sour Cream. While we’ve included a number of wholesome toppings in the recipe below like spinach, pine nuts, and yellow capsicum, feel free to tweak it to make it your own. You can add mushrooms, zucchini, pineapple, anything you'd like on your pizza, really!

Ingredients 

Pizza Dough

  • 7 g dry yeast

  • 1 tsp sugar

  • 310 ml warm water

  • 500 g plain flour, sifted

  • 1/4 tsp salt

Pizza Scrolls

  • 1 cup dairy-free cheese

  • 2 Tbsp dairy-free cream cheese

  • 1 tsp dried parsley
  • 1/2 tsp dried thyme

  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 Tbsp Dibble Sour Cream
  • 100 g baby spinach leaves
  • 1/2 yellow capsicum, sliced
  • 1 cup pine nuts
  • 4 Tbsp pizza sauce
  • 4 Tbsp Dibble Garlic Aioli

Method

Pizza Dough

  1. In a small bowl, mix together the yeast, sugar and water. Set aside for 3 minutes.

  2. On a clean bench, add the flour and make a well in the centre.

  3. Slowly add the yeast mixture with your left hand and with a fork in your right hand, gently combine the dry and wet ingredients together.

  4. Add a pinch of salt to the centre and begin to knead the dough for 10 minutes until it's soft and smooth.

  5. Add 1 Tbsp of olive oil to a clean mixing bowl, place the dough in the centre, cover with a warm tea towel and let it rest for 2 hours.

Pizza Scrolls

  1. Preheat oven to 200°C.
  2. In a mixing bowl, thoroughly combine the cheese, cream cheese, thyme, parsley, oregano, salt, pepper and Dibble Sour Cream.
  3. Roll out the dough into a rectangle about 36x24cm and 1cm thick.
  4. Evenly spread the cheese and Dibble Sour Creamfilling to the dough.
  5. Evenly add the spinach, capsicum, pine nuts, pizza sauce and Dibble Garlic Aioli to the dough.
  6. From the shortest edge, gently roll the dough upwards into a cylinder, making sure to keep the filling wrapped tightly inside.
  7. Divide the cylinder into 8 even pieces.
  8. On a baking tray lined with baking paper, pack the pieces tightly together with the intersection of the scrolls facing upwards.
  9. Bake for 20-25 minutes or until golden brown.
