Recipe for the Veggie Nuggets:
Chickpea Mixture:
- 1 can Chickpeas (Garbanzo Beans) rinsed, drained and patted dry with paper towels;
- 1 Green Onion (Scallion) roughly chopped;
- 1 clove Garlic;
- 1/2 tsp Salt;
- 1/4 tsp Pepper;
- 1 cup fresh Italian Parsley;
Carrot and Mushroom Mixture:
- 1 Large Carrot roughly chopped;
- 1 7 oz. can of Sliced Mushrooms drained and squeezed completely dry using paper towels;
Breadcrumbs Mixture:
- 1 tbsp Ground Flax mixed with 3 tbsp water;
- 1/4 c All-Purpose Flour;
- 1/4 c Panko Breadcrumbs;
- Oil of your choice for frying;
Vegan Honey Mustard Dipping Sauce:
- 1 tbsp Yellow Mustard;
- 2 tbsp Agave Syrup;
- 1/2 c White Vinegar;
- 1/4 c Dibble Mayo or Vegan Mayonnaise;
- 1/4 c Dibble Sour Cream or Vegan Sour Cream;
How to Whip It All Together to Create the Ultimate, Vegan-Friendly Indulgence
Step #1: Combine 1 tablespoons of ground flax with one tablespoon of water. Be sure to let it rest for ten minutes to let the water solution thicken up!
Step #2: Combine the chickpeas, green onion, parsley, and garlic in a food processor. Add salt and pepper to taste before pulsing the processor to create a coarse mixture. Set the mixture aside in a large container;
Step #3: Place your carrots and well-dried mushrooms in the food processor and pulse until they are finely minced. Moving forward, it’s time to re-introduce the chickpea mixture into the food processor;
