If you want the mayo to be a bit thicker, the best way to do this is to first decanter the amount you want to use in a small bowl. In another small bowl slowly mix together 2 tsp of cornstarch and 3 Tbsp of water. With a whisk, slowly add the starch mixture to the mayo until desired thickness is achieved. You can repeat this process if you want it even thicker.

As someone who loves cheese, that was the main thing I cared about losing when I went vegan a few months ago. Now I'm happy to say that I have found my cheese fix! This goes great on pasta bake, mixed with grated vegan cheese. So delicious. I only wish I could convince others to go vegan now too.
